Springhouse Reserve -- Farm to Bottle

 

Springhouse Reserve is located on our farm, Seven Springs Farm Winery & Distillery.  At home we prefer to "eat what we grow" either from our fields, our high tunnel, our chickens, or our "summer garden".  We feel the same way about our wine and spirits... "bottle what we grow".  We consider wine and spirits food, not just a beverage.

To the extent nature allows, we craft Springhouse Reserve wines and spirits from ingredients grown right here at Seven Springs Farm.  The two exceptions are malted barley and peated barley... these we purchase from established, high quality suppliers.  The malted barley comes exclusively from American farms and malthouses.  The peated barley comes exclusively from Scotland.

Bloody Butcher Corn

We use this in our corn-based spirits.  This is an heirloom variety valued not for yield, but for character. Unlike modern commodity corn, it brings a deeper, more expressive flavor—often described as rich, slightly nutty, and distinctly grain-forward. It’s rarely used in large-scale production because it’s harder to grow and less uniform, but in a carefully controlled process it can contribute real depth and individuality. At Springhouse Reserve, we choose ingredients like this not because they’re easy, but because they have something meaningful to add to the final spirit.

Fruits

Our own vineyard is small, and being within Indiana not the best climate for all the wines we produce, so we do purchase grapes and other fruits.  The grapes for our Cabernet - Aronia blend come from Canada, the Aronia berries come partially from our farm but mostly from farms in Southern Illinois. Cherries come from our trees and orchards in Michigan.  Apples come from our orchard and other Indiana orchards. Our Merlot grapes come from Chile, Gewürztraminer grapes come from Germany or Austria, for Sangeovesi and Pino Grigo we buy the grapes from Italy.

Other Grains

We grow barley, wheat, oats, and cereal rye on our farm.  But because of the need for crop rotation and Mother Nature's whims, we frequently purchase these grains from other American farms.  We're an organic farm so we do not use any herbicides, pesticides, etc.
